Quick and chewy Oatmeal coconut cookies

We are always trying to eat healthy but we do believe there is a balance between pushing yourself to eat healthy and to sometimes have a break and have a cheat. When we cheat we love to bake ourselves. The cheat becomes way more rewarding if you've baked it

:-) We love to bake cookies, and have so many favourite recipes that we use from others. But sometimes we create our own recipes, this one was created when we were really craving something sweet but did not have lots of ingredients in the house. We had to come up with something with using only what we had at the time. funny enough that this cookie became one of our favourites and now we make it all the time. its soooo good!!! :-)


1 cup Oil (we mostly use vegetable oil)

1/4 cup Sugar

1 cup Brown sugar

1 egg

1 teaspoon Vanilla extract

1 cup flour

1.5 cup rolled oats

1 cup shredded coconut

1/2 teaspoon baking soda

2 teaspoon Cinnamon

Little bit of salt

Mix sugar and oil. Add egg and vanilla and mix again.

Mix dry ingredients

Mix wet and dry ingredients

Bake at 180 for 12- 13 minutes.

Makes 18 cookies
